Garlic Jim's Gluten Free Pizza!!!!!

I heard a couple of weeks back, that Garlic Jim's was going to have a new Gluten Free Pizza crust. I didn't have high expectations because I had heard that there was another pizza place in closeby that had a gluten free pizza crust, but when I called I found out that they put egg in the, that was out for us.

I called Garlic Jim's as soon as I heard the rumor and asked them about the ingredient list in the dough and sauce. The manager was not completely sure, so I called corporate and sure enough, both the dough and the sauce are Brody Safe (no milk, eggs, peanuts or wheat).
Now, my pizza will not have cheese on it, but I will make up for that in fresh veggie toppings. Who would have ever thought that I would be counting down the days till I can have a pizza with sauce and veggies on it? I am SO thankful that when Brody starts to eat, that he will be able to have pizza. Honestly, it was made me sad to think that he might not be able to enjoy a pizza night.

Garlic Jim's has received the rice flour that will make it a Gluten Free environment. That's right...a gluten free environment in a pizza chain! I have been calling and asking when they will be serving the pizza....WELL....IT STARTS ON MONDAY 8/3 at Garlic Jim's!!! Guess what I will be eating for dinner???? The rest of my family will have a normal pizza and I will be savoring mine. I figure, whatever I don't eat, I will put in the freezer in individual servings.

For a limited time, Garlic Jim's accepts competitors' delivery coupons. Going to be looking through my pizza coupons...I knew I saved them for something :)

Just BLT's

The other day I was looking at my tomatoes and started craving a Bacon, Lettuce and Tomato sandwich. Bread is out, so I decided to make a bacon, tomato and lettuce wrap. If you can't have bread, or are wanting to cut out carbs...this is the way to go!

This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish

1 lb bacon cooked
3-4 sliced tomatoes (I had Roma tomatoes from my garden)
Hearts of Romaine Hearts
mustard (or other condiment of choice)

Put condiment of choice on your lettuce leaf then add a few slices of bacon and tomato; wrap and eat.

Stuffed Peppers and Mashed Potatoes

This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish

Stuffed Peppers
6 green bell peppers, tops cut off and cleaned out
1 1b ground sirloin
1 yellow onion chopped
salt and pepper
rice (enough to feed 4 people) follow directions on back of the rice box/bag
1 14.5 oz can tomato sauce
1 8 oz can tomato sauce
olive oil (for sauteing onion)

Put a pot on medium heat and add a little olive oil. Saute the onion and then add ground sirloin. Cook meat until it is cooked through and browned. Season meat with oregano and salt and pepper. Add cooked rice and 14.5 oz can of tomato sauce to meat and heat through.

Meanwhile, in another pot, boil water and place cut and cleaned green peppers in it for approximately 3 minutes. Pace peppers standing up in a casserole dish (8x8 or 13x9)

Fill each pepper with meat mixture (stuff them full). Then pour 8 oz can of tomato sauce over each pepper. Cover with foil and bake at 350 for approximately 20 minutes. *If you can have cheese, my husband likes me to add mozzarella to his the last few minutes of baking.
*My oldest son likes to eat the meat mixture (no green pepper) with mashed potatoes. I just save out some of the meat mixture for him.

Mashed Potatoes
Potatoes, half of a 5 lb bag (I used baking potatoes because they were on sale)
Chicken Stock (or broth that is gluten free...the one I used was Progresso)
Buttery Spread or sticks to taste (I used about 1/4 stick because that is what I had on hand)
Salt and Pepper to taste

Peel potatoes and cut them up into small pieces (this helps them cook faster). Put the potatoes in a large pot with water and bring to a boil. Once boiling, let cook for 15-20 minutes or until potatoes are soft. Drain the water. Mash potatoes up (I have a potato masher) and add chicken stock until you get the texture that you like. Add buttery spread and salt and pepper to taste. Serve alongside stuffed green peppers.

Safe Banana Bread OR Tropical Banana Bread

This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish

*This recipe is great to make if you find ripe bananas on sale at the store OR have bananas that you haven't gotten around to eating.

2 1/2 cups oat flour

1/2 cup sugar

2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

3 ripe bananas, mashed

1/4 cup safe butter

1 tbsp. apple cider vinegar

3 tbsp. rice milk

1/4 tbsp. vanilla extract


Mix dry ingredients together. Add mashed bananas, safe butter, apple cider vinegar, rice milk and mix well.

Bake in a greased loaf pan at 350 for approximately 60 minutes. Makes 12-18 slices.

Tropical Banana Bread

Make Banana Bread batter as directed above, with the following exceptions:

rice milk

1/2 cup coconut

3/4 cup mandarin oranges, drained

Bake as directed.

*I doubled the Tropical Banana Bread recipe and made 1 loaf and 12 muffins (I cooked the muffins for approximately 15-18 minutes on 350) so that I had extra to freeze for a quick breakfast on the go. When you are going to mess up your kitchen, why not have extra for later? :)

boom CHOCO boom...ENJOY LIFE...seriously!

I am enjoying a Enjoy Life dairy-free rice milk bar right now. It is equivalent to a chocolate bar, but it is dairy, nut and soy free! Did I mention that LOVE this company???!!!!! YUM! Normally, I am not a huge chocolate person, but tell me I can't have it and it is all I want (especially after dinner).

I bought a package of Enjoy Life semi-sweet chocolate chips (allergen free) to put in the chocolate zucchini muffins that I made a little while back and I ended up eating the rest of the bag...oops, I was supposed to bake with them. I then decided that I needed to get myself a chocolate bar and ration it out, one little square at a time. I felt more economical by doing it this way :)

Cherrybrook Kitchen

I have been hearing some great stuff about products from Cherrybrook Kitchen that are allergen safe. I gave them a call today, and they are sending me some coupons in the mail (ask and ye shall receive). Looking forward to trying out their gluten free, egg free, dairy free, peanut free products :)

Anyone have any tips for using a "mix" with the Ener G egg replacer? I tried to make brownies previously and they turned out like a rock...seriously, took us a few days to soak them out of the pan :(

Sausage and Potato Hash

I am a breakfast girl...especially on a lazy, Saturday morning. Give me some fried potatoes, eggs, sausage, biscuits and gravy (or with apple butter during the fall) and a cup of coffee, and in my opinion, this is the way to start the day. With the new allergy diet, some of my favorites are off limits. I have come up with a creation that satisfies my country breakfast craving, without the allergens.

This recipe is free of milk, eggs, wheat, peanuts, tree nuts, fish and shellfish

1 lb sausage cut into patties (I used Odem's Tennessee Pride Country Sausage All Natural Mild Flavor because it has NO MSG and it is usually on sale with coupons)
*Tip: if your sausage is still partially frozen, it is easier to cut into nice uniform patties
4 small baking potatoes (you could also use red potatoes, but use more to make sure you have enough)
1 large yellow onion (cut into strips)
1 large green or red pepper (cut into strips)
Pam with Olive Oil (there is soy in this)
Vegetable Oil
Grill Mates Montreal Steak Seasoning or Salt and Pepper

Cut your potatoes into bite size pieces. Spray the pan with Pam Olive Oil. Throw the potatoes in the pan, cover them with a lid and cook them on medium heat until soft. Move all potatoes to the outside edges of the pan. Pour a couple of tablespoons of vegetable oil in the middle of the pan. Let the vegetable oil heat up and then stir to coat the potatoes. Keep stirring the potatoes so they do not burn. Cook until the potatoes are brown and crispy. Season with Montreal Steak Seasoning or Salt and Pepper. Put the cooked potatoes on a plate with a paper towel so the paper towel soaks up the extra oil. Set aside.

In the pan you just used, cook your sausage patties or links until cooked through. Cut your sausage into pieces and put on a plate with a paper towel to soak up the grease and set aside.

Put a little vegetable oil in a pan and quickly stir fry the onion and bell pepper. Don't cook too much, as you want them to have a little bite to them.

Toss your potatoes and sausage with your onion and pepper and heat through for a minute.

*For people who can have egg, scramble a few eggs in another pan and toss them with your hash. If you can have cheese, throw some cheddar on there too!

I put Tabasco on my Sausage Potato Hash and my husband puts ketchup on his...whatever you like :)

If you have extras, even have breakfast for the next day. It reheats great!

Safe Blueberry Waffles

I had Van's All Natural Blueberry Waffles (wheat free, dairy and egg free) this morning and they were AWESOME! They were thick and did not taste like cardboard. I loved the little blueberries inside. YUM!

Yogurt...Without the HIVES!

Yes, Brody will be able to have yogurt (just not the one that made him break out in HIVES)!!!!A safe yogurt is All Natural SO Delicious Dairy Free Creamy Cultured Soy made by Turtle Mountain (it is dairy free, lactose free, vegan and made from organic soy milk). He can have YOGURT!!!! My goal in all of this, is to find things that Brody can have that will make him feel as close to "normal" as possible. It's crazy that I have to be careful with some soy yogurt products because some of them have milk cultures in them...go figure!!??

Fruit Crisp

This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish

4 cups fresh fruit (peaches, apples, blueberries, blackberries, etc.)
1/2 cup oat flour (grind up your oats in a blender until they are in "flour" form)
1/2 cup brown sugar
1/4 safe butter
1 tsp. cinnamon
1/4 tsp. nutmeg
1 cup oats

*you can use regular flour (for oat flour) and butter (for earth balance spread) if you do not have allergies

Put fruit in a pie plate or an 8x8 baking dish

In a bowl, mix all other ingredients with a pastry blender or fingertips until the mixture resembles coarse crumbs. Spread evenly over fruit.

Bake at 375 for 30-40 minutes, until top begins to brown

I picked some blackberries at a friend's house this evening and wanted to find a way to use them up. This recipe was easy and yummy. I see a peach crisp in the near future.

Bumpyname Orbit Labels

Bumpyname Orbit Labels are AMAZING! I wish I had known about Brody's allergies before they were custom made, but even so, they are great. These labels solve the problem of getting other kid's sippy cups put in your diaper bag :)

For a parent with a child who has food allergies, you can purchase the custom 2 line and either put the allergy (if it will fit) or put "food allergies" (if there are multiple since you can only have 17 characters on one line). What a great way to help the care provider "remember." You get 4 in a package and they are dishwasher safe and the kiddos can't take them off. LOVE EM'

Thai Lettuce Cups

This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish

1 tablespoon EVOO – Extra Virgin Olive Oil
2 boneless, skinless chicken breasts, cut into strips
1 red bell pepper, cut into to strips
1/4 cup sweet chili sauce (mild sweet chili sauce, bought at Publix in the ethnic section)
1/4 cup honey (used local honey)
2 iceberg lettuce heads, cut in quarters and leaves gently removed for cups (used romaine hearts because they were on sale..served the purpose)
Juice of 1 lime
1 handful basil, chopped (used fresh basil from my garden...yum!)

Place a large skillet over medium-high heat with 1 turn of the pan of EVOO, about 1 tablespoon. Season the chicken with salt and ground black pepper, and cook in the pan until golden brown on all sides.
Add in the red pepper, and cook until soft, about 3 minutes. Add in the chili sauce and honey, and reduce to coat the chicken.
To serve, lay the lettuce leaves out onto a platter then scoop some of the chicken mixture onto each leaf. Sprinkle with lime juice and fresh basil.

Serves 4

*I added crushed red pepper to my wraps because I like it spicy!!! :)

This recipe was VERY good. Brock chose to eat something else, but even Erik liked it (he was sceptical at first). If you wanted to, it would taste great as a stir fry; just add some stir fry veggies and serve over rice (white, brown or even jasmine would be yummy). The flavor of this meal is great! The basil in this meal makes it...I would try not to omit the fresh basil.

Need Coupons? Call the Manufacturer might be pleasantly surprised

I have been using coupons for over 2 years now and it really bothered me when I started to buy new items due to Brody's food allergies that these items rarely go on sale and coupons are not easily accessible (example: in the newspaper inserts). I did a little bit more research and decided to call the companies of the items I was wanting to try/buy.

I was happy with the outcome. You can do this with any item that your family uses, but do not get coupons for. Call the company and tell them how much your family enjoys the product or that you would love to try the item but the cost has been prohibiting you from doing so and then ask if they have coupons that they could send you. Most likely, they will be happy to.
*OR, if you don't feel like calling, drop the company an email and request some coupons. Hope this helps!

Chocolate Zucchini Muffins

This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish

1 1/2 cups zucchini, shredded
1/2 cup sugar
1/4 cup oil
1 tsp. vanilla
1 1/2 tsp. apple cider vinegar
1/4 cup rice milk (or other liquid that you can have)
2 cups oat flour (or regular flour if you can have it) If using oat flour: blend 2 cups of old fashioned oats in the blender or food processor...SO easy and inexpensive!
1/3 cup cocoa powder
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tbsp. cinnamon (I think next time, I will use 1 tbsp of cinnamon, it was a little too much for me)

*I also added 1/3 cup of Enjoy Life semi-sweet chocolate chips (allergen free). You can add regular chocolate chips if you would like. Hey, they are already chocolate...why not add some more?

Mix zucchini, sugar, oil, vanilla, vinegar, and rice milk. Add oat flour, cocoa powder, baking powder, baking soda, salt and cinnamon and mix until combined. Spoon into lined muffin cups.

Bake 350 for 20 minutes. Makes 12 muffins.

The muffins were surprisingly moist and I couldn't taste the zucchini (recipe name threw me off at first). I thought they were good and will make them again. Next time, I will double the batch and freeze them so we have something convenient on hand (especially for Sundays as we are running out the door). Brock liked them also...I just finished wiping his chocolate face :)

*Disclaimer-I have not had carbs in a few weeks, so this was a special treat for me. They do not taste like Sam's/Costco chocolate muffins, but they are good. Also, they are great for using up zucchini in your garden if you are sick of roasting it and eating it for dinner :)

Tip: Shred some extra zucchini, measure it and put it in a labeled freezer bag so you will have on hand to make this recipe again.

Sophie-Safe Cooking

We will be heading back home soon. I am coming home with new knowledge of good substitutes for foods that are safe for Brody and a new allergen free family friendly cookbook. When I was in Whole Foods a week ago, a lady told me about a book called Sophie-Safe Cooking by Emily Hendrix. She told me that her family loved it (it is always so nice to hear from someone who has already traveled that road). I mentioned it to my mother-in-law and she surprised me by having it mailed to her house (she has been incredibly helpful through this process). I flipped through it today, and it looks great! The recipes are normal breakfasts, main dishes, side dishes, salads and desserts with ingredients that can be bought at the grocery store (no specialty items).

Sophie-Safe Cooking is written by a mom whose third child is allergic to milk, eggs, peanuts and wheat. Sophie's allergist also recommended not to give her fish, shellfish or other nuts until she was at least 3 years old; therefore the recipes are free of these ingredients also.
Sophie-Safe Cooking is a family friendly collection of recipes that are free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish (which are the top 8 allergens).

I am actually looking forward to start making some recipes from it. A huge plus for me...some of the recipes include zucchini and squash which are overflowing in our garden right now :) I am always looking for new ways to use stuff from my garden.

Lovin' Trader Joe's Allergy-Free Foods and Prices

I am visiting my mother-in-law, and she was so kind to search for foods (at a few grocery stores) that I can eat (she even called manufacturers). She did such a great job of buying items so I did not feel "left out." It is awesome because I get to try items and see if I want to purchase them when we get back home. For someone who is allergic (or has a kid who is allergic) to any of these products (milk, eggs, peanuts and wheat) this is information is pretty awesome! I never knew I could get excited about Brown Rice bread...yep...I did :)


Milk Allergy
-Organic Soymilk (Non GMO...non gentically modified)
-Earth's Balance Vegan butter sticks/also comes in a tub
-avoiding products even manufactured in the same plant as milk products

Egg Allergy
-ENER G egg replacer 16 oz. (You mix the powder with warm water to equal one egg). I use this when I make pancakes.
-Food Allergy Mama's Baking book has delicous recipes without milk, eggs and peanuts (you could substitute Gluten Free All purpose flour for regular flour). Honestly....her stuff is so good...and you do not need to worry about Egg Replacer
-avoiding products even manufactured in the same plant as egg products

Peanut Allergy
-I.M. Healthy original creamy Soynut Butter (We tried Sunflower Seed Butter and it has a distintive aftertaste...I prefer the soynut butter)
-avoiding products even been manufactured in the same plant as peanuts.

Wheat Allergy
-Quinoa pasta (pronounced Keen-wa...this is less mushy than the Brown rice it!)
-Brown rice pasta
-Brown rice bread
-Tapioca dinner rolls (EnerG 9.88 oz)-tasted good toasted with earth balance vegan butter and garlic on it.
-Van's Gluten Free, Dairy Free French Toast Sticks (approximately $3.29...Whole Foods has a coupon out right now for $1 off of 2. You can somtimes find these are Kroger for $2.50).
-Rice noodles
-Whole Grain Oats (found in the cereal listed below and the granola bars)
-Cascadian Farm Organic Harvest Berry Chewy Granola Bars (these go on sale BOGO at Publix all of the time and you can usually find a coupon online)

-The wheat allergy is honestly the one that I am having the most trouble with. It is in almost everything.

I was taking a shower with a sample of Aveeno shampoo that I had gotten in the mail and I looked at the ingredients and sure enough, there was wheat in it. I then rewashed my hair with "safe" shampoo. I couldn't believe it. Now, we are not only looking at food labels, but every label. Wheat is in some baking powders, vanilla extract, and soy sauce. Did you know that wheat is also in play dough? Yep...playdough...sigh.

Trader Joe's

Went to Trader Joe's today and LOVED it!!!! We have one in Green Hills. I felt the prices were great for the products that I needed to buy to substitute mine and Brody's diet. Here is what I picked up (Tara, this is for you...these are all Trader Joe's brands :)

-Trader Joe's Organic Brown Rice Pasta 16 oz. $1.99 (this is the best price that I have seen and I have been looking....most places are selling 8 oz for almost $2.59..CRAZY!
  • Spaghetti Pasta (ate it tonight and couldn't tell that it was any different than regular noodles)

  • Pasta Fuslilli (spiral pasta...can you say pasta salad??? ALRIGHT!!)

  • Penne Pasta

-Trader Joe's Triple Berry-O's 11 oz. $2.99 (Honey Oat O's with Dried Blueberries, Strawberries & Raspberries). Finally, I have found cereal and it is GOOD!

-Trader Joe's Crunchy oats & honey granola bars $1.99 (8.9 oz. 12 bars, 2-bar pouches).

-Trader Joe's Pad Thai Noodles and Sauce 9oz. $1.69 Erik and I love Pad Thai and I am going to add chicken, steamed broccoli and lime juice for a quick and easy ALLERGY-FREE meal.

-Food for Life Wheat & Gluten Free Brown Rice Bread 1 1/2 lbs. (bought at Trader Joe's for $3.49). FYI-I saw similar bread at Whole Foods for almost $7 OUCH

-Charles Shaw Chardonnay (the Trader Joe's in North Carolina sells wine) $2.99 Not on Brody's diet (ha!) but could not pass up the price. We love to cook with white wine. What a deal!!!!

I am writing all of this stuff out so I can keep track of prices and hopefully help others who have found themselves in this situation. Maybe it will save you time combing the isles to find stuff that will work. I have done a little bit of it for you (at least to get you started). I read every label and disclaimer. I am happy to have found some items that taste good and the prices are not ridiculous. Stay tuned for more information. I told you...I am on a mission. I love food too much to not eat :)
