Here is an easy side that has lots of color and is full of flavor.
Cilantro Lime Coleslaw
This recipe is free of milk, eggs, wheat, soy, peanuts, tree nuts, fish and shellfish
2 garlic cloves, pressed
1 Tbsp sugar
2 Tbsp lime juice (usually 1-2 limes)
4 Tbsp extra virgin olive oil
1 tsp crushed red pepper
a dash of coarse salt and pepper
1/2 bag of coleslaw
1/3 cup cilantro, chopped
In a bowl combine first six ingredients and whisk together until blended. Add the coleslaw and cilantro and mix well.
*This can be made ahead and chilled in the refrigerator
*Most of the time, I double this recipe so we have leftovers (or if we are going to have guests for dinner)
